Chocolate Cupcakes with Whipped Frosting

I'm not going to lie...when it comes to cupcakes, I have a bit of a confession to make.
I love them.
They may possibly be my favorite dessert ever.
I love trying new combinations of toppings, frosting, flavor, and consistency with every batch that I make. I see a recipe for some amazing cupcake and immediately say to myself (or whoever is conveniently nearby),"I have GOT to try that."
This recipe is a simple chocolate cupcake recipe with a nice fluffy frosting (no grit like the stuff you get from the store!). It's easy to make and extremely tasty when you have it finished; but then again, what cupcake isn't tasty when it's all done?

Your cupcake ingredients: Eggs, Vanilla, Butter, Salt, Cocoa Powder, Baking Soda,
Baking Powder, Flour, Sugar, Oil, Milk, Coffee


Combine all the dry ingredients in a mixer and whiz until combined (or do it by hand...)


Next step is combining wet and dry ingredients in the mixing bowl.

When they are well mixed, scoop the batter into your cupcake pans.
Don't overfill!

Pop in the oven at 350* for about 25 mins or until a toothpick comes out clean.

Now for the frosting! Beat two egg whites until frothy. (I did this by hand, but
the mixer works just as well.) Add other frosting-y ingredients. Whip mixture until you can hold it over your head without it falling out of the bowl. Seriously, try it. 

Put frosting into a zip bag and cut a corner off (small cut!). Decorate your now cooled cupcakes.

 Cupcakes
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 3/4 cup unsweetened cocoa
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup cold brewed coffee
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vinegar
  • 1/2 cup butter
  • 1 tsp. vanilla

Frosting
1/2 cup heavy whipping cream
2 egg whites
Powdered sugar
1 pinch cream of tartar
cocoa powder to taste

Preheat oven to 350 degrees. In a mixer, combine flour, sugar, cocoa, baking soda, baking powder, and salt. Whiz until combined. Slowly add softened butter, vinegar, oil, milk, vanilla, and coffee. When mixture is fully combined, drop spoonfuls into a lined cupcake pan. Bake in oven for about 25 minutes or until an inserted toothpick comes out clean. Remove from oven and place on cooling rack.
For frosting, combine dry ingredients. In a separate bowl, beat 2 egg whites until frothy. Add the heavy whipping cream to the eggs and beat slowly. Bit by bit, add in your dry ingredient mixture until it becomes a thick consistency. You should be able to hold the whole bowl over your head without the mixture falling out....Or, if that's too risky for you to try, stick your whisk in the bowl and pull straight up. If the mixture can stand up on its own, stop mixing. 
Place frosting in a bag, cut a small bit of the corner off, and frost your cooled cupcakes. Add desired topping and enjoy!
